Moose DIY butchering by Greg Wilbur
DIY Moose Butchering Guide
Processing an 800 lb moose yourself takes teamwork, preparation, and a clean workflow — but it saves $1,000+ in butcher fees and gives you complete quality control from field to freezer.
Phase 1: Field Care & Transport

Delay Field Dressing Until Transport
Do not gut the moose until it is right beside your truck or trailer. The only exception is if you must quarter it in the bush for pack‑out — in that case, breathable game sacks are essential.
Pro tip: Fly Control – Sprinkle black pepper liberally on exposed meat surfaces (including the throat cut). Flies will not lay eggs on peppered meat.

Head Straight to the Check Station
Skip driving around showing off your harvest — time and heat are working against you. Take your photos in the field or at camp, then head immediately to the check‑in station.
Pro Tip: Internal body heat causes deep‑tissue spoilage quickly. As soon as the cavity is opened, pack it with as much bagged ice as possible to drop the core temperature fast.
Phase 2: Skinning, Washing & Hanging

Strip the Hide First Thing
Drive directly to your butchering setup and remove the hide immediately — it acts as an insulating blanket that traps heat.
Wash the carcass thoroughly to remove hair and debris. If ceiling height is limited, cut the moose into four quarters.
Hang Quarters in Cold Storage
Hang quarters in a clean cooler held strictly between 34°F and 38°F (1°C to 3°C).
Once the carcass is safely cooled and hung at proper temperature, your meat is protected. NOW you can sit back with your hunting partners and celebrate.
Phase 3: Aging & Cut Breakdown

Age for 7 to 10 Days
Ideally allow the animal to hang undisturbed for 7–10 days. Aging breaks down tough muscle fibers and improves flavor and tenderness.

Process One Quarter at a Time
Break down the meat methodically:
– Backstraps
– Tenderloins
– Roasts
– Steaks
Collect all clean, high‑quality trimmings into bags and freeze them for later burger and sausage batches.

Phase 4: Packaging & Sausage Ratios

Double‑Wrap & Label Everything
Protect cuts against freezer burn:
– Plastic film + heavy butcher paper or vacuum seal
– Label every package clearly with cut name + date.

Grind & Mix Ratios
Keep trim meat thoroughly chilled or partially frozen prior to grinding for clean cuts and best texture.
Ground Moose Burger
Mix lean moose trim with 20% beef suet for moisture and rich flavor.
Moose Sausage Batches
Combine lean moose trim with 20%–25% fatty pork plus your chosen seasonings.
Realistic Effort Required
Expect butchering, wrapping, processing, and equipment cleanup for all four quarters to take at least 2 full days for a 2‑person team equipped with proper tools.
